Quinoa (KEEN-wah) for breakfast:
Ingredients:
1 cup cooked quinoa (red or white)
1 cup milk (can use soy or any preference)
High quality honey
Handful dates chopped
Handful dried figs, chopped
Handful dried apricots, chopped
Handful of pepitas and a handful of sunflower seeds
Handful of almonds
½ sliced granny smith apple
½ teaspoon cinnamon to sprinkle over the feast
Method:
1. Heat the quinoa, milk, honey, cinnamon, dates and dried figs.
2. Serve topped with nuts, seeds, honey & cinnamon
You can toast the nuts if you wish and add additional fruit such as mango. Add additional nut varieties such as walnuts, pinenuts, pistachio.
Really you could add anything you deem healthy & yummy
