| Sustenance in seconds - Miso Soup |
Top |
|
Miso Soup, a staple diet for the Japanese, only takes moments to prepare. It can be served on its own or as part of a main meal. Miso, fermented soy bean paste, adds a rich flavour and is highly valued for its health-giving properties.
According to Japanese custom, the solid ingredients are chosen to reflect the seasons and to provide contrasts of color, texture, and flavor. Thus a strongly flavored ingredient (spring onions) mixed with a delicately flavored ingredient (tofu), are considered a good combination. Ingredients that float, like wakame seaweed, and ingredients that sink, like potatoes, are also good combinations. No two solid ingredients should have the same color, texture, or flavor. That way, all the ingredients will contribute uniquely to the soup
Ingredients:
3 cups dashi stock
2 thinly sliced fresh mushrooms - shiitake or white button.
(Dried shiitake mushrooms can be added as an alternative).
1½ tablespoons miso paste
1 tablespoon Japanese soy sauce (optional)
1½ oz (45g) silken tofu—cut into cubes
1 tblspn dried seaweed (pre-soaked in cold water for a minute to allow expansion)
1-2 spring onions —thinly sliced on the diagonal
Serves 2
All ingredients are easily accessible at Japanese grocery stores and in many instances your local supermarket.
Simply bring the stock to a gentle boil in a saucepan, add the mushrooms and simmer for 3 minutes. MIX together the miso and soy sauce in a small bowl, then add to the hot dashi stock. ADD the tofu and seaweed. HEAT the soup and, just before it comes to the boil, remove from the heat.
POUR the soup into bowls and garnish with the sliced spring onions on top to serve. YUM!
Variations:
You can add various other ingredients to make a more substantial soup, such as cooked carrot strips, diced potatoes, cooked shrimp, cooked fish, sesame seeds, diced chicken, grated or sliced daikon, snow pea sprouts, cooked rice noodles, or paper-thin slices of fresh ginger.

The Power of Thought
Be careful of your thoughts
for your thoughts become your words.
Be careful of your words
for your words become your actions.
Be careful of your actions
for your actions become your habits.
Be careful of your habits
for your habits become your character.
Be careful of your character
for your character becomes your destiny.

Afterthought:
In the time it has taken you to read this you have possibly taken a deep breath, reflected, imagined, relaxed and dreamed of getting away.
You have stopped just for a few moments at least...
So now stand up and stretch; walk around for a minute or two and drink a glass of water.
Hopefully this small break will have restored your energy.
Have fun!
